RICE ..EASY AND TASTY IDEAS.

RICE AND MORE RICE……………

We all love rice and the variety today is amazing. We eat mainly whole grain rice, but enjoy wild rice, red rice and all the new exciting varieties o in the market place.
  Create rice dishes that are a meal in a bowl. They are quick to do and can be warmed up the next day.

RICE RISOTTO

 Cook two cups of rice as you normally do.   Slice two onions, three cloves of garlic, two grated carrots, a diced red pepper and yellow pepper.  Sauté these in a pan with a little olive oil. Do this on a medium flame. It takes a few minutes. Add salt, pepper and a level teaspoon of curry powder. Chop two tablespoons of parsley and mint leaves. Add and stir.  Add three  two teaspoons of honey and a few raisins  When this mixture is done, stir into the rice and serve hot with chopped cashew nuts on top.
 Serve with a green salad, lettuce, thinly sliced onions, two finely sliced figs and sprinkle with coconut. Drizzle olive oil and lemon juice, salt and herbs as a dressing

 INDIAN RICE SALAD.

2 cups of cooked rice
Chop the following;2 tablespoons of parsley, a few mint leaves, a chopped clove of garlic, one sliced onion,  two cubed tomatoes, drain one tin of peaches, or fresh ones and cube them. Add a few soaked dried apricots, sliced thinly. Mix all of this with two teaspoons of curry powder, a few teaspoons of chutney and salt and pepper, and a cup of mayonnaise or techina. Mix all and stir in with the rice. Great to serve on a bed of lettuce and sprinkle sliced almonds and sultanas on top

RICE AND MUSHROOMS
 Cook two cups of rice and serve on a platter with the mushrooms and  onions on top.   Slice three onions and a few chopped cloves of garlic and  sauté in a little olive oil. Sprinkle salt and pepper on this with cut up chives and  green onions. Fry lightly. Add a few varieties of mushrooms that are cut up and sauté. Now add three teaspoons of Soya sauce and a few pine  kernels.  Fry a little and  serve on the rice..   This is delicious.

TRAVEL TIPS....WHAT TO SCHLEP ALONG.

Well it is the season of traveling and we all need reminders of what we must take along Take the passports, tickets for flights,
 health insurance,
 the prescriptions for medications you use,
a copy of the  prescription glasses you wear,
a copy of where you are staying  and
the copy of your credit card and who to phone in case of it being lost.
 Leve the name of your Doctor and medical aid at home

LEAVE COPIES OF ALL THE ITEMS MENTIONED. ABOVE.
 IT SAVES TIME AND TROUBLE

 Flights have changed and do not be surprised if there is no cushion, blanket, candies to ease a blocked ear or  to watch the movies.  Companies are trying to be economical, so the area for legs and seat space have been trimmed. Did you trim before the flight?
Be sure to use a reliable Company for your flights. Have the number of their offices in the towns you will be in. You might need them for changes of flights, confirmation or lost suitcases.   .

Take your medications, spectacles for reading, a pen, notepaper, a book to read, a snack box, and medications to make flight easier Here I recommend a chap stick for dry lips, Sunrider SUNBREEZE cream to help headaches, stiff muscles and make your make breathing easier. It is amazing how this excellent 
Chinese cream opens up the nasal passages.
  It is important that in case you do not like the food, you have raisins and nuts, snack bars and of course  chocolate. No flight can be good without a chocolate bar. I prefer to skip the caffeine and liquor. I rather go  for fruit and vegetable juices  or water
  Have a warm cardigan and socks, in case the air conditioning is too cold for you.

I take with a first aid box. Anti histamines for allergies and bites,    a moisturizer for dry skins., a few plasters . Wet  wipes and alcohol wipes and tissues .
Speak to your Doctor or Nutritionist and have extra Vitamin C, Echinacea or Air Borne for the flights..  I also take along a Bach Rescue Remedy for stress, sudden shock, or panic attacks. I use the Rescue Remedy cream on flight and Rescue Remedy drops are in my suitcase. Ask the Doctor for a muscle relaxant, eye drops, ear drops  an a tablet for diarrhea  or tummy upsets I take along Arnica for immediate use for bruising and Aloe Vera cream or Gel for insect bites and over exposure to sun

If you have little children, take along games and crafts to do. You will find these useful while you wait for connecting flights

CANCER WHAT TO EAT….WHAT TO AVOID.

I had the experience of watching the devastation that Cancer can cause, when my late husband, Jeff,endured disease and treatments over a long period some years ago. I realized that the appetite, taste buds, the enthusiasm for food had changed. Each day was simply filled with hope of getting through the day.

What could I do in the home to make the situation easier?

One….make delectable meals. Create dishes that look appetizing.
Two. Create an ambience for comfort when eating. A flower in a vase, two or three ornaments as a centre piece. Invite a friend who is good company.
Three. Make the meal slow, undisturbed by phone calls. Put soft music on, not horrific news in the background.
Four Sit down relaxed and have everything ready to serve. Jumping up and down is not relaxing for the patient. They need lots of attention at these times and tender loving care.
Five Cook in good utensils. Only glass, Corning ware, Stainless steel. Not aluminum or ceramic that might not be safe. Do not use foil. Rather use waxed paper.
Eat irons, spinach, soaked dried apricots, liver and if you are vegetarian, ten soaked almonds daily.
Drink fresh beet juice, carrot juice and apple juice. They are best fresh. You need a small glassful. You can mix grapes with berries and pomegranates and drink this too.
Eat natural anti biotics…garlic and onions daily. I take a whole garlic, cut it in half and bake it in the oven. Then I squeeze out the garlic and place it in a container with a little olive oil on top. This way you can use it on toast, in salad dressing, in cooking and as a spread over steamed vegetables.

Oats, bran, wheat and brown rice are good for you. Remember that at night you might not feel like eating. A bowl of cooked oats, with a few almonds, raisins and cinnamon can be a satisfying meal. You can have soya milk or rice milk over this cereal

Eat by color. You need the yellows, peppers, carrots, pumpkin, oranges, and mandarins. persimmons. sweet potatoes., yams, cantaloupe and squash.
The reds, peppers, tomatoes, berries, pomegranates, red beans, red apples, red cabbage and cherries. and grapes.
The greens. There are so many. Lettuce, cabbage. spring onions, parsley, oregano, basil, mint, cucumbers, leeks, celery, dill, fennel, squash, marrows, beans ,peas, asparagus and kiwis..broccoli and brussel sprouts.

The healthy banana full of potassium and magnesium, apples, pears, egg plants. Potatoes onions, garlic, turnips.. The list is endless.

Have a little of each daily.

Eat slowly Eat seated in a well aired room. Be comfortable in your chair.
Take time to chew the food slowly and do not drink water with your meals.

Drink water away from meals. Avoid caffeine in coffee, teas and skip soda type drinks.
Drink water, lemon and mint. Have hot milk with honey and cinnamon as a night cap.

DO NOT EAT, white sugar, salts, sugars, processed meats, sausages, colonies, and reheated foods. Eat fresh meals.

AVOID AT ALL COSTS.
Cosmetics that are tested on animals, the additives and chemicals in body preparations. Check your deodorant, shampoos and tooth pastes. Try to use a company that is safe in the way they manufacture. I use SUNRIDER products.
Skip the use of stove cleaners, hair lacquers, sprays against crawlies, outdoor cleaners that are poisonous and the horrific cleaning materials that promise to wipe it all away. All these interfere with our immune systems and when you are having cancer treatment, the immune system needs extra care.

Most important is to be sure to consult with your Doctor re your progress, vitamins, foods and how you feel.

Remember the human body has powerful ways of healing. Meditate, go for healing, be positive and do not postpone JOY. Let each day have its magic and appreciate the sunset that brings the promise of a new day.

Go for walks, smell the flowers, listen to the bird song, chat to the dog, relax often and delight in the small things.
