Rona Kruger MAYA  ANGELOU has left this world and we are richer for the legacy she has given us.

. We all need some help with out thoughts that go out of line.
 We all find some days we say awful things and regret them a while later
Maya Angelou saw so much in all around her. She had a deep sense of gratitude for Creation, Respect for Earth, Love of fellow men and gave us tools for improving who we are

. Let the angels cradle the soul of a gem, a sparkling example of a good person, a woman of substance and more than anything a woman we loved

FUN IN YOUR NEIGHBORHOOD
Life in Israel is very eclectic, exciting and there is something for everyone , everywhere. A few weeks ago we visited the NAMAL Port area of Tel Aviv. It is next to the Reading area at the entrance to the 24/7 city of tel Aviv. Every Friday there is a delightful Market of fresh vegetables , fruits and cookies, cakes, honeys, olive oils, cheeses and the best ever organic nuts, dried fruits and delectable exotic items too The variety of breads and deli items are endless.

I always buy Carrot cake, cinnamon cake and cookies from MAMELA. It is run by a creative baker who uses wholewheat, honeys, cinnamon and good ingredients. I freeze them for using later and find this very successful.

Near Mamela is a couple who aell the most amazing vegetables and fruits. try the black cherry tomatoes, the black turnips, the large sweet radishes, the glorious artichokes and of course cherry tomatoes, sweet long red peppers and organic raisins and more.

It is a good feeling to buy local, from the growers, to chat to them and find out how to use the new products. The market has fabulous [places to eat and you will come away ready for next time, for more of the good stuff and for the ambience of a live, real food eporium

QUINOA                        QUINOA                       EXCITING GRAIN  

Quinoa is easy to  use, can be made quickly and you can use it in place of rice, bulgur or pastas. 

Quinoa has health benefits, protein, amino acids, minerals, calcium and phosphates.  

QUICK PANCAKES WITH QUINOA

2 cups cooked quinoa
1/2 cup flour
2 beaten eggs 
2/3 cup soy or  ordinary milk.  Mix all and  lightly fry in a little olive oil  Turn gently and do both sides. drain on paper and serve with vegetables or a salad.


QUINOA as a base for a quiche, or vegetable  pie or simply to add to a omlette. You can stir fry vegetables, add crushed cashew nuts, a few  sunflower seeds and make a mix of all these with cooked quinoa. 

I use quinoa with curry , turmeric and chopped parsley, chopped red peppers and  sprinkle all with coconut and raisins. Makes a quick easy dish for work or evening meal.

Remember you can use it for Tabouli and for a replacement for Pasta.

   FRESH, SEASONAL FRUITS AND VEGETABLES. 

 Check out the market and see what is available fresh and in season for Passover. Mushrooms can be a great meal. with  mashed or baked potatoes. Sweet potatoes can be diced and grilled in the oven with herbs and served over a fresh salad. There are amazing root vegetables that you can grill with olive oil, rosemary, mint and herbs.  
 I like to use many different stir fry dishes for Passover. I use broccoli, sweet potatoes, potatoes, mushrooms, lots of chopped herbs, diced peppers, carrots and kohlrabi. Spice with  fresh Tekoa ginger and dates. Add lots of chopped onions, red onions , cloves of garlic and some chopped cashew nuts. 
 Kale and chopped spinach can be lightly fried in olive oil with chopped walnuts, onion,s garlic and salt and pepper. This is quick and easy and can be added to an omelette and rolled  and served with warmed up Matzos. Go to my blog and find stir fry dishes and easy beets, dates  and    vegetable ideas.
Use fresh fruits for easy salads, strawberries with cream or ice cream. Yogurt is an excellent idea with fruits. Add a few pine nuts and juice of mandarins and oranges, pomegranate pips and chopped fresh dates. I soak the dates in wine or fruit juice and add to the fresh fruits salad. Bake apples with cinnamon and a good tea bag in the oven. Prick the apples, add cinnamon and the tea bag and bake  . Lovely with yogurt or  ic
