spelt an alternate grain

SPELT…THE ANCIENT GRAIN


Spelt is ancient wheat. The grain has become popular as it is a high protein food, has a good nutty taste and is nutritious. Spelt can replace whole wheat or grain flour in recipes
You can use it in cakes, breads, muffins, cookies and even pancakes.

LINDA'S SPELT CAKE.
I have eaten this at my friend, Linda and it is delicious.

2 and 1/4 cups of spelt flour {or half ordinary flour and half of spelt flour.}
4 eggs.
3/4 cup of oil.
1 teaspoon baking powder. {2 teaspoons of baking soda}
1 teaspoon cinnamon.
2 cups grated zucchini {marrows}.
1 small cup dates. {if whole dates, melt in water]
1/2 cup brown sugar.

Mix the flour, baking powder, eggs and oil. Add the grated zucchinis, Add the cinnamon, dates and sugar.
Mix well
Bake in a medium oven
Serve with apple sauce, or even maple syrup.

SPELT COOKIES

3 cups of spelt flour.
1 and 1/4 cups brown sugar
1/2 cup butter
1/4 cup honey .
1 teaspoon baking powder
2 eggs
Half a cup of oil.
1 teaspoon vanilla extract.
1/2 teaspoon salt.
Beat the sugar, butter and oil.
Add the eggs, honey and vanilla. Beat well. Add the dry ingredients Mix both . Place in the fridge for an hour or two. Roll and cut cookie shapes
Bake 175dgrees for eight minutes.


SPELT PIZZA AND SAVOURY BASE.

I make this base and bake them in a large oven dish with different fillings on them.
2 cups spelt flour 1 teaspoon vegetable salt. 2 cups of yogurt { you can add some sweet cream}
1 teaspoon of dried parsley and some fresh chopped basil.


Mix all and roll into a ball. You can keep it in the fridge for an hour or two.
.Take a large oven dish and wipe it with olive oil. Flour the base.
Place the fillings you have created.

I use different cheeses, slices of baked sweet potato and kaskeval cheese grated on it.

Use peeled slice tomatoes and cut up baked peppers, with mushrooms and some grated cheddar cheese.

I make a mixture of cream cheese, two cups of sweet corn, diced pickled cucumbers, cut up olives and grated yellow cheese. Just mix it all and add 1 large teaspoon of mustard. Spread this over the dough and bake.

Grate two cups of tofu, add two teaspoons mustard, one cup of chopped green spring onions, two cloves of garlic and one red onion.. Mix in a cup of yogurt and one cup of cottage cheese . Bake this on the dough

Bake this in an oven of 180 degrees and make sure the dough is baked through. It should take 20 to 25 minutses.......................................................................................
When you have baked these fillings, just serve hot with a green salad with a sweet dressing Use basic lemon juice, olive oil, honey . a few pine nuts, pecans and a chopped red pepper. Blend all and serve.
