RESOLUTIONS FOR A GOOD YEAR, SANE AND SENSIBLE CHOICES

RESOLUTIONS FOR THE NEW YEAR.

When the calendar changes and a new year is heralded in , we look back and think about the year that has ended. Of course, each one of us, has had a varied experience, re acted differently to emotional and personal changes. We have had success, failure, challenges and generally only want the New Year to be better…………………

Look at your life and review what is good, of value and makes you a whole person. The little things you do that make a difference to another human being, are of value.
The hand you put out to help some one who is in pain, is time worth spent, and the love you shower on those you cherish, is giving and loving unconditionally.

What we do , what we eat, drink and spend time on, is what will make a difference to our health, well being and attitude each day. People can be busy, but selective in choices of good food or eat careless junk. Sane and sensible eating should be a priority and a resolution for 2010. We know where the mistakes are. Jamie Oliver found it in the school lunches, and with effort he has revolutionized eating habits of all the kids. They feel better and their work has improved. A kid loaded with sugar, trash and heaps of additives and chemicals, has not got a chance to be alert, bright and enthusiastic. You must make the change in your home, in the school lunch box for kids and members of the family. Snacks can be sane and tasty too….not salty prepackaged nibbles that lie on a shelf. They have all that "stuff" in it, to last for months and years in the store. That does not mean you have to store it…. Eat fresh, simple foods that are well prepared. Eat at regular hours. Drink water, caffeine free drinks and fresh milk. Forget about packaged instant pop up miracles in the micro, instant recreated pastas, purees , spicy smoked meats and salty snacks. LESS FATS, LESS SALTY EATS. LESS SMOKED FOOD. LESS SUGAR AND MORE TIME CARING ABOUT WHAT IS GOOD FOR YOU.

EXERCISE DAILY, GET UP OFF THE COUCH. BREATHE DEEPLY. YOGA, SPORTS AND SWIMMING WILL HELP YOU TO IMPROVE THE BREATHING.
SLEEP REGULAR HOURS AND LESS PLAYING WITH LAPTOPS, TV AND GIMMICKS, LATE AT NIGHT.
BATHE AND EXFOLIATE THE SKIN. USE PREPARATIONS AND TOILETRIES THAT ARE NOT TESTED ON ANIMALS.
TAKE TIME TO HELP OTHERS, WHO ARE LESS FORTUNATE THAN YOU.
REMEMBER, RESPECT YOUR PARENTS, TEACHERS AND PEOPLE WHO MAKE YOUR LIFE MORE PLEASANT. THE WORK PLACE IS FOR YOU TO EARN A LIVING. YOU ARE THERE FOR HOURS. BE MINDFULL OF OTHERS. BE KIND, FOR EVERY ONE IS FIGHTING A BATTLE OF THEIR OWN DAILY..
BE IN TOUCH WITH EARTH AND SKY, TREES AND ANIMALS AND APPRECIATE THEIR ROLE IN OUR UNIVERSE.

Make up your mind to trash the junk from the fridge and pantry and re create a home of good choices.
Skip fats and oils, Use a little olive oil, techina and fresh vegetable and fruit sauces. Create them in the blender and use for cooking and smoothies.
Have good nuts and raisins, dried fruits and health snacks. The best are apples, carrots, celery and good fruits.
Toss all fancy condiments, ready sauces and make your own.
Skip cereals that have been popped and created for shelf life for years. Cook oats, rice, granolas, grains and beans. You can make granolas easily. Muffins are great and healthy cookies are simple tp make. Look at previous blogs for muffins and crunchies.
Make fresh soups often. Stews and casseroles are easy to do the night before and have with rice, couscous and grains for a meal.
Check the breads you buy Be aware of the salt and fats in your breads, rolls and crackers.

HOLIDAY FEVER,,,,,,,,,,,,,GIFTS,,,,,,,,,ENTERTAINING AND LOTS TO DO.

The end of the year is nearly here and we all get into the swing of busy days, invites and lots of gifts and get togethers. I love festivals , as they remind us of the joy there is, in every day life. Be mindful of the way you can make an ordinary day good, make a little moment special and create memories that will remain beautiful.

SHOPPING.
We all know that the last minute is when the stores are crowded, queues are long, and patience and time wear thin. Do no go there . Plan now. Start with a list of who you will invite, who you will visit, and who will be stay over guests at your home.
Buy the dry goods now, ingredients for favorite dishes, check if you have adequate serviettes, clean cloths, candles and dish cloths. Plan the tables in your mind and make a menu list for your events. Then plan to cook and bake ahead, where you can. Cookies, cakes and quiches, can be made ahead. Make sure that you have cookie cups, baking containers and plastic containers to store in and to give to the family to take food home. Whatever is left over from large meals, will be tossed in three days from the fridge. My daughter, SEL, says, ''DO NOT BRING THE ENEMY HOME" she reminds me that I do not need a shelf for cookies, ice cream in the freezer and corners of chocolates for desperate housewives and women with weak moments. I buy good chocolates, when I entertain. When the guests leave I put them back into the container and seal well with tape. The fear of breaking my nails DISCOURAGES me ,even in a weak moment, to open them, for instant gratification. It works to have a date, dried fruit, banana or a few spoons of yogurt.
The same applies to cream, fancy creamy cheeses and puddings. Leave them in the store for some one else. Buy SANELY and SENSIBLY, it is the only way to be in control.

GIFTS.
I love to buy gifts, especially the kind I would like to receive. Books and book vouchers, are a welcome gift. The music world offers super discs, I received the Susan Boyle disc for Chanukah It is a sheer delight to listen to her singing. Kids love a voucher to a store that has computer soft ware and music they like. A gift of a massage, a gourmet cookery class, a week end away, a concert or a tour in the city, is lovely to give.
Start a Chanukah tradition that the kids receive a bit of Chanuhak Gelt and they can save it. You might need to remind them what SAVING is, no one remembers this any more. The banks offer a give away money box, if you open an account for kids……………………this is what the world is made of, the planning ahead for rainy days,
Original gifts unclude,flowers that arrive once a month for a year, pizza that is delivered twice a month,what fun. I gave my kids a voucher for a coffee emporium and that was handy for a quick coffee and something to eat when there is no time to skip home.
A visit to UTOPIA, the Orchid garden in Bachan , is a terrific outing. Walking shoes, a camera and you can browse for a few hours and enjoy a light meal there.

CHALLENGES AND COURAGE ..MINDFULLNESS

PEOPLE WHO HAVE CHALLENGES TO OVERCOME…..COURAGE AND DETERMINATION

We are all aware that our society has people with different challenges daily. There are those of us who have so much, good health and are able to cope physically and mentally. We are able to create our thoughts and plan our lives. My daughters, both studied special education, and are aware of how much, we are able to change the lives of people who need special attention and help. I feel we need to have a sensitivity to others problems and being mindful of others is vital to ourselves. Your mindfulness is what makes you aware of yourself and people around you

A week ago, I went to see an amazing and unforgettable performance. It is held at the theatre complex in Jaffe, Tel Aviv. The "NALAGA'AT CENTRE" . This means DO TOUCH.
The Theatre complex has a restaurant where the waiters are deaf or hearing impaired. The theatre performance that I saw was "NOT BY BREAD ALONE" I recommend you to see this and take family and friends. The actors have overcome so much to perfect this show. Your emotions are fully engaged as you watch the brilliance of each performer. Adina Tal, the founder and artistic director, has done miracles with the members and helpers of this show. Once will not be enough . Phone 03.6330808 You can arrange group bookings and tourists will find this a highlight of their trip to Israel. They will be delighted with the unique performance and translation into ENGLISH. The venue is known to any cab driver and you can enjoy the show and have a meal there.

Being mindful also means caring for people who have special needs when they are in your home. Prepare menus for kids that are suitable. Make soups and basic foods for them. Skip the exotics and unknown Kids like food they know and recognize.
Older folks are similar. Give them basics, let the hot be hot and make the desserts simple.

When you serve a large group at the table, remember that the dishes should be duplicated. People get lax about passing the butters, dips and salads. Prepare two of each and it is easier for everyone.

I make larger quantities of soups, casseroles and quiches. Then they can be carefully packed and shared with an older friend or a person who is not well enough to cook. There are good containers that make it simple to do Being mindful of others, enriches your life.

WINTER IDEAS FOR QUICK MEALS.
Winter means warm dishes, ample goodies for an indoor week end and all you need to do is PLAN WELL.
I find that a careful list, early shopping and a little cooking ahead , work well. Always have a large pot of soup. Rolls, Bagels, French loaves and good breads are essentials. Have cheeses, butter and some spreads to create sandwiches, sauces or pastas and cucumbers and olives for tasty relishes.
I buy lots of fresh vegetables. Lettuce, tomatoes, cucumbers, radishes, carrots and spring onions, can create salads and fillings for good snacks. Eggs are great to boil, mash and serve as sandwich spreads. I use techina, salt and pepper with the egg, chopped parsley and herbs. I skip mayonnaise and fancy preserved dressings.
Make a lasagna or pasta dish ahead of time. Quiches are good too.
For really nourishing meals serve soup, baked potatoes and some fillings for them.
Desserts can be baked apples, just core and fill them. Serve with custard or ice cream.
Make vegetarian lentil burgers and serve in a bun with pickles…….potato chips and tomato slices. You simply need to make the list carefully and shop ahead.
Finally, winter is a good time to enjoy being together, so drag everyone into the kitchen and they will be part of the preparations. Nothing like peeling heaps of potatoes, cutting them and making great chips with the kids….… ……… LOVE AND LIGHT FOR A FESTIVE AND MAGICAL WEEK OF CHANUKAH. RONA

CHANUKAH TREATS, GIFTS , IDEAS.

CHANUKAH - FESTIVAL OF LIGHT AND MIRACLES.

We all love holidays and Chanukah time is full of stories, miracles, traditions and many doughnuts. Families gather together, sing, light the candles and enjoy eating all the festive doughnuts. We exchange gifts and kids receive "Chanukah Gelt". These lovely ways of celebrating are wonderful. We look forward to the event with a new magic each year.
Take time a few days ahead and make sure you know the safety rules for working with hot oil. {See the blog of Chanukah 13th December 2008}
Have lovely blue, white, silver and gold decorations, candles, many different Chanukahs for the kids to light and an abundance of gifts to make all the kids happy.
The same blog of 13th December , 2008 features many different recipes, and I will give you a few more ideas to create a lovely warm evening.

CHEESE LATKES.

Beat the following: 2 large eggs, 3 tablespoons flour, three tablespoons butter, 1 tablespoon brown sugar, 1 teaspoons sugar and 1 cup of grated ricotta and cottage cheese mixed together.
I flavor with a grated onion and a large tablespoon of chopped parsley. Beat this all and add a bit of black pepper and vegetable salt.
Fry in hot oil and drain well on a serviette or paper towel. I serve these with apple sauce, or yogurt with a teaspoon of honey and cinnamon in it. They can be made a day ahead and warmed up.

OVEN BAKED LATKES.

These can be made a day ahead. My Mom used to serve these with a few side dishes, like cinnamon mixed with sugar and raisins, custard, apple sauce and whipped cream mixed with fresh chopped fruits.
Use half a cup of flour, 1/2 a teaspoon of baking powder and 1/3 a teaspoon of salt. 3 eggs. 1/4 cup of water.
6 medium potatoes, and one medium onion.1/4 teaspoon black pepper and 1/4 teaspoon sweet paprika. 3 tablespoons oil.
Mix flour, baking powder, salt , eggs and water.
Grate the potatoes and squeeze out the water. Grate the onion and add with the spices. Mix well.
Oil a baking dish and pour in the mixture Bake 230c or 450f , for 25 minutes.
Cut into squares. Serve hot with a little bowl of cinnamon, mixed with brown sugar


DESSERT AND TEA TRAY.
Have these ready on a table or on trays. Let everyone help themselves and you can have time with the guests.
HOT DRINKS.
KIDS. Have Milo, Ovaltine, Carob Powder, Cocoa, and a large thermos of hot milk. The kids can spoon out what they want and add sugar or honey with the ready hot milk.
HOT treats. Cook up a large pot of apple cider drinks with cinnamon sticks and a few bits of mint in it and a grated bit of apple.

Hot green tea with herbs and flavors. Use a few bags of green tea and the appropriate amount of boiling water , a few sliced kumquats, some sliced oranges or peeled mandarins ,lemon slices with four or five cloves, a little cinnamon powder and a teaspoon of agave syrup or honey. Mix well and let it brew. Serve in a coffe mug or large glasses with a long spoon.

Have a camera ready to take pictures next to the Chanukah candles and with the family. You can purchase a lovely Chanukah gift at the local post office for the kids. The set of stamps to celebrate the Festival of light comes with a disc of music of the Chanukah songs.

THANKSGIVING RECIPES AND IDEAS.

THANKSGIVING THE TIME OF TOGETHERNESS AND GRATITUDE

Thanksgiving is the day of the year, when we think of others. We take time to reflect on what we have, the little things daily that make life pleasant and easier. We all need to look deep inside and be grateful for the health we enjoy, the daily tasks we do without much effort and the world around us that has a pattern and routine ,that work.
Be thankful for what we have, maybe not everything we want. What we want, is not always, what we need………………
The world is smaller, the issues are large as ever, the dreams trying to unfold daily. Take this year as the time you will make an effort to help others dreams come true. Help to educate children and see that the poor have food and clean water. Every little effort adds up. We all want a better and safer world for our children.

Here are a few quick idesa for the menus for Thanksgiving Day.

Starters……………………consider how many kids there are and have a few foods ready.
Baked hot potatoes. Cooked corn. Baked beans. Hot potato chips.
Falafel balls. Hummus and Techina. Olives . Pickled Cucumbers.
Have pitot, buns and whole-wheat breads on the side.
Make dips ready and a few sauces like tomato, mustard and grated cheeses.
The kids can create a plate to eat while they wait for the main courses.


CURRIED EGGS.
You can do these two days ahead. Boil twelve eggs hard. Cool and peel.
Make a sauce that you pour over the eggs and refrigerate for a day or two.
Slice two large onions thinly, three dried apricots, three cloves of garlic. Place these in pot with a few black peppercorns, three bay leaves, two teaspoons of apricot jam or honey, a few sultanas or raisins, a little salt and pepper, half a cup of water, half a cup of vinegar and two large teaspoons of curry powder. Let this cook slowly for fifteen minutes.
Pour this over the boiled eggs and cover with a lid. Refrigerate when it has cooled down. Great to serve on a bed of lettuce.

PUMPKIN FRITTERS.

These can be made a day or two ahead and served with apple sauce, caramel syrup and even a little whipped cream or vanilla ice cream.
2 cups mashed cooked pumpkin.

4 tablespoons flour. 1 egg. 2 teaspoons of baking powder and a little salt to taste.
Sift the flour, baking powder and salt. Add to the pumpkin. Beat the egg and add.
If not stiff enough, add flour . Drop spoonfuls in hot oil and drain Sprinkle with cinnamon.
Serve warmed up with the side dishes.

SIMPLY DELICIOUS FRESH SALADS.

LETTUCE AND CITRUS FRUITS..

Wash a variety of lettuce and drain in a lettuce spinner. Arrange on a large platter. Cut up citrus fruits, mandarins[ Peeled and in segments.] Grapefruits, oranges and kumquats.
Slice red onions, two teaspoons of pine kernels, chopped parsley and some mint leaves. Arrange on the lettuce. I grate Roquefort cheese over this. Add the dressing of lemon juice, olive oil, salt and pepper and a teaspoon of Dijon mustard and honey. Mix well and pour over the salad..

SPINACH SALAD AND NUTS
.
I wash and dry spinach leaves. Chop of the stalks. Cube three firm pears, one apple, half a cup of chopped sugared pecans, two tablespoons of chopped almonds and grated cheddar cheese over this. Make a simple dressing and pour over as you serve this. You need to do this last minute as the pears and apples could discolor. A little lemon juice over them can prevent this happening. For the dressing use lemon juice, chopped parsley, olive oil and herbs, vegetable salt and a bit of black pepper. Mix well and pour over the salad.

DRINKS THAT ARE FUN TO HAVE.

HOT APPLE CIDER.
.
Warm up some apple cider drinks and add little cinnamon and a few slices of lemon. Serve warm .



GREEN TEA TREAT.

Take two tea bags of Green Tea, five cloves, two sticks of cinnamon, some mint, lemon and geranium leaves.
Add a few slices of oranges, or kumquats, four cups of water. Mix in with a dash of honey. Warm all this up and pour into coffee mugs. Lovely aroma and satisfying drink….no liquor

DESSERTS…QUICK AND EASY.

If you have a large crowd, make it easy and delicious. Have bowls of chocolate sprinkles, 100 and 1000's, chopped marshmallows, chocolate crunch or chocolate chips, little marshmallows and lots of cut up fruits. Buy an assortment of ice creams and let every one create their dessert. The ready made ice creams make a great dessert platter and every one likes to choose what they enjoy eating.

RONA'S SANE AND SENSIBLE IDEAS. FOR FAMILY VALUES THAT MAKE MEMORIES.

Make a gift packet for each child. A toy, chocolate and a wish ward. Write a message on the card for each kid.

Have some one to take photos of everyone there. Family photos, the generations of grandparents, kids and grand children, babies and the cousins. You will enjoy these over the years and love the growth and changes you will see.

Have a guest book with the date and year on it. Ask everyone to take a page and write name, birthday and address and email on it. Then a personal message and a wish list. The photos you take can be sent to the email and the birthdays can be placecd on Face book or on a birthday page on the Internet for everyone. You can paste a photograph on the page opposite the messages written in the Guest Book.

These are important memory makers.


Ask the kids ahead of time, if anyone wants to perform, play an instrument of entertain the family. A concert can be a lot of fun.

MOTHERS………………..THE MOST PRECIOUS JEWEL.

November 15th is the date of my Mother , Sonia's birthday.
Every year I light a candle and celebrate the beautiful woman she was. I share the love with my brother Jack and wife Eleanor, and my younger sister Helena and her husband , Peter. My children and grand children know how we all loved her, respected her and held her close to our hearts as a beacon of love, warmth and appreciated this lovely woman.

Sonia was a talented milliner, seamstress, could do anything with her golden hands. Her baking of cakes, cinnamon buns, taiglach, kichlach, pereg/poppyseed cakes and cheese cakes were amazing. She could make the best soups, stews, jams and relishes, canned yellow, cling peaches, guavas and cookies, real ice cream and melt in the mouth cookies.
My Mom's kitchen was an emporium of aromas, jars of goodies and bubbling pots filled with delicious foods. Her heart was a store house of memories, love, hugs and kisses.




Mothers are special gifts to all of us. Do not take a Mother for granted. She will do anything for you, love you unconditionally and stand when she is tired, smile when tears are close, support you no matter what, listen, when she would rather go to sleep.
Do not imagine they grow on Farmville, or appear on Facebook, or can be replaced from the super market. Mothers are the most precious thing in your life. A Mom is one of the things you need to be thankful for this Thanksgiving and every day.

Mom's Scones
2 cups of flour. 4 teaspoons of baking powder.
2 teaspoons of sugar. 1/2 teaspoon of salt
4 tablespoons of butter . 2 eggs
1/3 cup of cream or milk. {soya milk is good too}

Mix and sift the dry ingredients . Work the butter in.
Add the beaten eggs {Keep a little for the top}
Add the cream. Toss the dough on a floured board and roll a quarter of an inch in thickness. Cut into squares or rounds . Bake at 180 or 450 for 15 minutes.
Dry on a cookie rack.
Serve with butter, jams and cream.

QUICK DOUGH FOR PITZA, QUICHE, OR AS BASE FOR SAVOURY PIES.

1 cup of self raising flour.
2 tablespoons butter. A pinch of salt,
I beaten egg, beaten with a little cold water.

Rub the butter with the flour and salt. {you can add 1 teaspoon baking powder}
Mix in the egg and water. Roll dough into a ball and chill for an hour or two. Use on a slightly oiled pie dish, baking tray or pitza tray.

I often add some dried rosemary or herbs to the dough, or a few chopped dried tomatoes.
You can make the bases and freeze them until needed.
For individual quiches, simply make them ahead of time in appropriate containers and freeze.

Natural ice cream

1 cup of milk. 1 tablespoon of a good liquor or brandy.
1 packet of vanilla pudding.
1 cup of thick cream
2 tablespoons of chocolate powder or cocoa, mixed with a few drops of water into a liquid like base.
Beat all and freeze.

Have a good week and take a moment to think of the chores, responsibility, duties a Mom undertakes, the love she gives you, the warmth of her smile, the acceptance of who you are……………lucky you to have all that.

MOM…you are always in our hearts….the love we have is the love you shared.

OILS, BUTTER AND FATS

OIL……………………………………………….
Oil is oil. Of course butter and oil make food tasty and delicious….but it is fat and oil. When I see chefs on TV pour the oil casually with style, into pans and pots, I just think how much they are using. The sponsors need the advertisement and we need to be SANE and SENSIBLE.
We must cook and work with the minimum of fats and oils. It requires a little thinking and patience.

Selecting oil. When you buy oils, make sure that it is from a recognized and approved brand. Fresh oil has a clear light color and abused oil has a dark brownish hue. There have been reports in years gone by of people who color sunflower oil, green and sell it as olive oil. There are tricksters who add motor car oil, to increase the volume or do more horrendous things to make the color look good. Rather check the product and pay a little extra for quality oil. Remember that oils like sunflower oil with a high concentration of polyunsaturated fatty acids, has a shorter life span than olive oil and rapeseed oil. These have more monounsaturated fats.

Oils that foam or smoke prematurely should be discarded as they have signs of degradation. Oils should not be heated above 200degrees Centigrade. They can be flammable.
Do not reuse oil too often… Overused oil is detrimental to health...
When you need to throw oils away, DO NOT POUR DOWN THE SINK. You will block the drains. Simply mop it into newspaper and drop it into the garbage bin.

Keep oils in a dark spot, away from heat and sun light.

FRYING THER PERFECT EGG.

I recommend a DROP or two of olive oil in the pan.. Use the new ceramic style pans that are safe. The better alternative is what I do.

I pour enough water to cover the base and warm it up. I drop the egg in and it cooks or poaches in the water. I add a few herbs to the water and enjoy a fatless egg. Easy and healthier.

The idea of a blend of vegetable juices and herbs, works well Just pour them into the pan and heat, then drop the eggs in. I use tomatoes, parsley, onions and peppers for the juice.
There are new pans that are ceramic based and need no oil or butter at all.

SHAKSHUKA,
This is a great way to have tasty eggs.
Use a tomato based sauce, like one for spaghetti, with vegetable salt, red chopped peppers, onions, garlic, chopped tomatoes, garlic, pepper, a few tablespoons of chopped parsley and a little sweet paprika. Let it cook until the vegetables are soft. While it is bubbling, drop the eggs in. This is such fun to eat. There are many variations of this dish. To really experience it, go to MR SHAKSHUKA in Jaffa and you will always return for the pan of shakshuka the way he makes it.

OLIVE OIL SALAD DRESSINGS.
I always use olive oil and lemon juice, vegetable salt, pepper, honey and balsamic vinegar as a quick dressing. You can add agave syrup or some grated garlic, green onions, dill or any herbs you like. I find that a dropper bottle of olive oil, determines how much I use. This way you automatically use less.

OLIVE OIL AS A BASE.
I like using olive oil and vinegars, herbed or natural apple cider vinegar, with herbs, to "pickle" mushrooms, feta, goat's cheeses or vegetables. You use a good sized bottle, pour the oil in, add the spices and herbs you like, dill, parsley, garlic, onions, and the product you wish to pickle or marinate. Let it stand for a day or two and it is great item for sandwiches, salads and with a baked potato.

When you have a large salad, you can make a few spreads in little bowls with olive oil and herbs, pesto and oil, dried tomatoes in olive oil. Create a spread of black olives, herbs and olive oil. Just blend it well. These are tops with pastas, cheeses, wines and breads and of course in an omelets, that you fold over and serve with hot whole-wheat.
People love a little olive oil and balsamic vinegar, mixed in a bowl, to dip into with a well baked brown bread. Just a few cheeses and a glass of wine, good conversation and the stage is set for an unforgettable meal.

OLIVE OIL WINTER DRINK….

This is a great morning drink. Tones the system, wards off colds and is a natural tonic for the skin. Do try it…….you will feel the benefit in a few days.
Boil the water, pour into a coffee size mug, and add half a teaspoon of lemon juice, a teaspoon of olive oil and a dash of honey. Mix well and drink. For people who suffer from sore throats, add grated ginger or one large ginger candy. For warming up the system, add cinnamon and mix well.

My daughters use this remedy and they have a glowing and healthy appearance.

GROWING OLDER AND BEING ABLE TO SAY NO. YOU ARE NOT AS YOUNG AS YOU WERE.

So often I hear people my age say that they are left exhausted by Friday night dinners, family lunches. The most tiring job is taking care of the kids for a week end…..they cannot cope with the responsibility and the physical demands that last 20 hours a day.

When we are able to juggle with 24 hours, we use all our energy and imagination. But at some point, we feel drained of all of it. Energy levels are lower, physical ability is less and the arduous task of being in control,is just too much.

I feel that re arranging get togethers, needs a little consideration of your age, the space you have to prepare in, and of course, your ability to shop. The labor involved and the cost, play a role in senior citizens lives. Do not be shy or embarrassed to say……."kids . it is not as easy as it used to be". We all love the company, the sharing of the tales of the week, the family gossip and stories. No one wants to be alone for special times, holidays and birthdays, but as we are older, we need a little help.

I suggest that we meet with the kids and discuss it all. Do not cancel get togethers just re-arrange them. Perhaps change them to high tea or a cold meal, and less courses.
I feel it is easier to arrange a buffet meal and everyone helps themselves. Only the older folks and little kids are served their food at the table. There is no problem with any family as to helping with a course. Perhaps one of them bring the main course, or desserts.

When the kids tell you they have a free week end with co workers in Singapore, Paris and Rio de Janeiro, and need you to babysit,………………………. take a deep breath
Babies, young kids and teen agers , have different needs. You will have a lot of responsibility for any of the age groups. You will not be sleeping the whole night. The babies will yell or you will hold you eye lids open with a match stick, waiting for the discos to close at three in the morning. You will need a first aid box, sewing box and of course many, many snacks that are needed all day and night. So in order to cope, do not expect to use the phone, meet friends watch any TV ,plant crops on Farmville,,,,or have time to shop. No hope.
Plan all the food well in advance, have lots of food in the fridge and make sure the dogs and cats have their snacks ready in the house.
A week end is really four nights…………………they kids leave three am on Wednesday morning. They return on Saturday night at three…………………so four nights with no sleep, is a week end.

Arrange a programme, when the kids go out, when they do home work, when they have friends over and most important, when do the TV and lap tops go to sleep?

I advise you to smile and gear up for days of love and fun. You do not have to teach or discipline them One of the kids will complain if you do. Your daughter in law will feel you are strict and the son in law, will say, it is not your job to discipline the kids. You just have to cat nap during the day and be alive for any unexpected event for the week end of four nights.

The bottom line, is never miss a request to help… You kids need the time to be together and if you can make it possible......just do it..........…it is worth every drop of your energy…..love, love, love and count your blessings.

DRINKS FOR WINTER DAYS AND NIGHTS….NIGHT CAPS.

I often think of how many cups of caffeine we consume, simply because they are instant, quick and require no effort. A teaspoon of hot water and presto, the quick fix. No one stops to think if it is good for us, has bad side affects or if it keeps us awake and really is only instant gratification …………….

My late husband, Jeff, was a pharmacist as well as a Homeopath and Naturopath. He loved making concoctions. During winter he always went into the garden, picked a few grapefruit and made his "Hot Grapefruit Drink" that everyone loved. Simply squeezed half a grapefruit per person into a jug, a dash of honey and boiling water. It worked; it was tasty and felt good in the system. We can make quick lemon drinks like this, add honey or cinnamon and they are a satisfying drink.

I remember my Mom, used to warm up the milk, pour it into the tall glass and we were given a square of chocolate to drop in and stir. It was simply wonderful.

I would like to see cocoa used for kids for hot drinks. Simply add a little honey and make the drink with milk, soya milk or almond milk.
There is a great product called Almond Cream. It is created in Jerusalem from fresh almonds The local name is Skedia. The almonds are cold pressed and it has the consistency of peanut butter. Many mothers use this as an alternate choice to cows milk. You need to know what age they start with it and how to mix it. It is written on the container. For the kids and adults, just boil milk and spoon this in. You can add a drop of vanilla or cinnamon, honey or agave syrup. The kids and adults will love it. Better than sweetened sugary drinks and caffeine loaded mugs.
There are two other drinks I love for the whole family. Ovaltine and Milo. The basic chocolate drinks are good if the ingredients are pure cocoa and non harmful additives. Just check the ingredients and who manufactured the drink, and of course the dates.

If you have had dental work, suffer from sore gums or gum infections, drink the famous Rona's cure for all. Simply boil the water and pour two cups into a jug with six or seven cloves. Let it stand for a few hours and drink the tea. It works wonders.

I also like the cure for stuffy noses, colds and any flu symptoms. Cut up two onions, place in a pot with three cups of boiling water. Cover with the lid and drink FIRST THING IN THE MORNING. When you have this on an empty stomach, it clears the mucous, cleans smoker's throats, and relieves stuffy noses. You will feel the differenceI in a few hours.

FORTUNE DELIGHT WITH THE LEMON TASTE OR CINNAMON AROMA,

CURE THE FLU…. ONION DRINK.

Stand near the onions and cut them up into tiny slices. Then place the five cut up onions into six cups of water, add half a cup of parsley, a leek, a little dill, a clove of garlic or two and salt and pepper. Grate in one carrot for color. Slowly cook this until the ingredients are soft. You can have the soup a few times a day.

ANTI FLU VISUALISATIONS IN THE HOME.
Have bowls of onions in the kitchen, a few garlic lying around and a jar of honey , lemons and citrus foods in a large bowl. Grapefruit, guava, mandarins, oranges, nectarines, lemons, tomatoes, cucumbers, broccoli and cabbage, lettuce and green herbs and avocadoes are great for snacks.

PREVENTION AND TIPS TO FIGHT WINTER AILMENTS.

At the beginning of winter, we all feel the days are too short and dark falls too early. We still hang onto the summer joys. Often this is the time to start prevention ideas for winter ailments.
Firstly, you need to be warmer at night. Sleep with a blanket that is handy to use if you feel cold. Make sure the kids are covered and tucked in. We forget with the stylish duvets, that half the night they lie on the floor and the kids are uncovered and cold.
Old people need a light cover and air in the room too. Make sure they can reach a light, panic button, or phone and no little rugs next to the bed. Either a floor cover or large carpet. Slipping is often the result of being half asleep or in a hurry to go the bathroom. The kiddies need nightlights for security and to help them find their way when they are half asleep.

I do not like all kinds of wake up clocks, cell phones, TV's, radios and other electrical gargets in the bedroom.

Start the day with a glass of water. Drink this when you have washed your teeth,
Have a healthy morning drink ....not coffee on an empty stomach.
Start with 1. A glass of boiled water with a slice of lemon in it and a bit of honey.
2. Have the same drink with the addition of one teaspoon of oive oil. This is great for the bowels, skin and general health..
3. For people who have scratchy and sore throats, dryness and problems with catarrh, add some ginger to the morning drink. You can grate it into the drink, or prepare the drink the night before. This is how I do it. I use fresh ginger or two ginger candies. Boil the water, use two glassfuls. Add the ginger and cover the glass. In the morning drink the water and eat the ginger, or drink it and top it up for later.
4. Cranberry Juice is great to fight infection, Supposed to have components that fight E.coli bacteria . I recommend half a glass topped up with water once a day.
5. Orange juice, grapefruit , mango and apple are good in season. Do not gulp them down, as they need to be taken slowly and let digestion begin in the mouth. Vegetable juices, carrot, celery, parsley, tomato, beetroot and smoothies with a blend of all, are great. Especially good for people post operations and having cancer treatments.

You will feel the difference that honey, lemon and ginger make to health. The old fashioned remedy of crushed cloves of garlic and honey with a grated onion, prepared the night before, is a great tonic for kids against colds and infections . Just a teaspoon of the tonic in the morning for kids, older folks and in fact all of us.......................a teaspoon a day, keeps colds away.

Breakfast is a must. No one must leave without a cereal that is cooked. Use oats and add honey, cinnamon or a little brown sugar. There are other cereals that are good too, but not the general commercial things that we do not know what happens in order to prepare them.

I like a fruit and yogurt breakfast with nuts and raisins.
Kids like toast and an omelets too. Make sure they eat slowly and comfortably. This will make the difference to their day AND TO THEIR STUDIES.

Washing hands before eating, after toilet and touching all the grime on subways, buses and in the streets generally, playing with birds and animals, need a good wash with soap and water. Encourage the family to make this a priority all the time.

Start the winter with walking, breathing, yoga and time outdoors every day. Take time for reflection and doing hobbies indoors when the suns sets. Find time to catch up on yourself…………………………………………………………………………………………

ONE COURSE WINTER MEALS….NOURISHING AND WARM……SOUL FOOD

'Here are some ideas for a great meal for the family and guests. You can make it ahead of time and heat it up. I find that with some soup, good bread and a main course, the meal is done.

FOCACCIA, BLACK OLIVES, ONIONS AND COOKED POTATOES.

Buy two large breads, the flat type. Fry three chopped onions in a little olive oil. Add pepper and salt, a little crushed garlic and some rosemary sprigs. Fry until the onions are soft.

Dice three cooked potatoes, and cut up half a cup of black olives.
Place the onion mix, the olives and potatoes on the bread.
Roll up and secure in foil. Leave in the fridge until you are ready to bake it . Unroll the bread sprinkle a little olive oil and grill for ten minutes.
Serve this with a great green salad, diced tomatoes and a red onion, good Dijon dressing and slices of health bread. Enjoy.


SPINACH AND WALNUTS, GOATS CHEESE PIE.


Fry three chopped onions, two peeled grated potatoes , two cloves of garlic, one teaspoon of grated ginger , salt and pepper in a little olive oil This will take about seven minutes Wash and slice three cups of spinach and mix this into the fried vegetables. Let this cool a little while.
Add two beaten eggs, one yogurt, grated apple, one cup of grated kaskeval or goats cheese. Stir through half a cup of chopped walnuts. Place in a lightly oiled baking dish and bake for fifteen minutes. This is terrific with a good cooked rice or bowl of hot cous cous. I also like to roast red peppers and serve them peeled with a little olive oil, herbs and parsley.


NOODLES, LEEKS, CHEESE AND CAULIFOWER PIE.

Cook the noodles and drain. I cook about 350 grams. Slice two cups of leeks, two cups of cauliflower cut into pieces, salt and pepper and fry lightly in a little olive oil. I chop three tablespoons of parsley and stir this in as well. I use half a cup of cream and milk mixed together. Or you can use a cup of yogurt. Stir gently to mix it all.
Use a fairly deep oven dish and oil this lightly. Layer the noodles and thinly sliced onions. Cover with a cup of grated cheese. Sprinkle on a little black pepper and dried rosemary. Place under the grill for five minutes and serve.
Serve with a cabbage salad, mixed with black olives.


MUSHROOM, POTATOES AND ROSEMARY QUICHE.

Use a variety of Tekoa mushrooms. Half a cup for each person Fry in a little olive oil, with black pepper and vegetable salt. Mix two cups of yogurt, three cooked and diced potatoes, a cup of chopped onions, two beaten eggs, sprigs of rosemary and half a cup of grated cheddar cheese. I bake this for twenty minutes in a medium oven and serve the dish on a bed of cooked rice noodles. I pour over a mustard sauce made of two teaspoon s of Dijon mustard mixed with a jar of yogurt and chopped chives or parsley.


Remember the winter meals should be hot, filling and have lots of color. That is why I add salads that look fresh and full of energy. Have a few nuts and raisins to add to the rice and cous cous dishes.

Make this week creative and fun for all of you. Remember many people are not feeling as warm as you, so look around and help those who might need a blanket or a few sweaters, gloves and a woolen cap for winter.

Potatoes cold and hot, quick and easy to create.

POTATOES.

Potatoes are a delightful vegetable. They are easy to prepare, everyone loves the variations we use to enjoy them and they have good food value. If you want a light meal, a side dish or food for little kids and older people, the potato is your answer.

BAKED POTATOES.
Simply scrub the skins and bake the potatoes. You can then slice and bake them in the oven, in a dish with a little olive oil, salt and pepper, drizzled over them . Bake for fifteen minutes. I serve them with finely cut up chives and a little techina.

BAKED POTATOES WITH SIDE DISHES OF PESTO, TOMATO RELISH AND OLIVE SPREAD.

I bake one or two potatoes per person. When ready I cut them in half and sprinkle a little yogurt on them, dried parsley and grill for two minutes. Serve with a pesto spread, tomato and olive spread in little bowls. For kiddies I make a bowl of grated cheese and they love to sprinkle it on the potatoes.

POTATOES AND CHEESE FILLING.

Bake the potatoes. Then scoop out the inside and mash with salt and pepper and a little chopped parsley. I mix a yogurt, or cream, a little olive oil, half a cup grated cheese, salt, pepper and vegetable salt. Beat the filling well and replace into the potato. Carefully spread more grated cheese on top and bake in a hot oven for ten minutes.

POTATOES AND MUSHROOMS.

I love this easy to prepare combination.
Peel seven potatoes, boil for ten minutes in a little salted water. Slice into layers. Slice three onions into rings, slice four tomatoes, without the skins, one large cup of sliced, fresh mushrooms. Layer these in an oven dish that has been oiled with a little olive oil. Sprinkle with vegetable salt and pepper. Cut up parsley, a few garlic cloves and bits of dried onions and a few sprigs of fresh rosemary. I cover it all with a cup of yogurt and some low fat cream cheese. You can use cream, but I prefer sane and sensible ideas. Bake this for forty minutes in a
medium oven. You can do this a day ahead and re warm.

BAKED VEGETABLES
I use two cups of peeled, diced potatoes, two cups of diced carrots, one cup of onions, half a cup of chopped turnips, three slice zucchinis, six cloves of garlic, a cup of button mushrooms, a few shitake mushrooms, a cup of cauliflower flowerets, vegetable salt four bay leaves and a few black peppercorns. Place in a large oven dish. Sprinkle olive oil over it all. Pour on two large cups of vegetable soup into the dish and bake covered for forty minutes in a medium oven. Remove the lid and check if the vegetables are soft. At this stage I add two cups of sour cream and a cup of chopped chives and parsley and bake for ten minutes more. Serve with grated parmesan cheese on the top.

POTATOES AS A COLD SALAD

I bake ten potatoes in their skins. Then I peel and cut them up into squares. Some people scrub the potatoes well and leave the skins on. Kids prefer them without the skins. I place them in a deep salad bowl. Make a mixture of one cup sour cream, pepper and a bit of curry powder, one grated onion, three teaspoons of Dijon mustard, and two diced pickled cucumbers. Mix it all and serve hot or cold. You can add chopped black olives over them and serve with cut up boiled eggs. Use two cups of sauerkraut as a side dish and this will be an easy meal to create.

A NEW START…..BEGIN WITH A SANE AND SENSIBLE APPROACH.

It is always time to start with a new way. Do not waste time. You have the freedom to make choices. Make them Sane and Sensible ones.

I believe that educated people can alter foolish ways of living, bad eating habits and create time for physical fitness and weight balance..

Start with the refrigerator and the kitchen area. Eliminate everything that is not healthy, synthetic, plastic and filled with oils. Look at the foods and condiments you consume………skip the fancy preserved junk. Use simple choices, products that are digested easier.

Drink clean water and natural juices. Fruit nectars look great, but are loaded with sugars and preservatives. They could not have shelf life if they were not that way. Do not buy the picture, buy what you will swallow and hopefully benefit from. I like to choose a juice and water instead of drinks, coffees and café concoctions.
Milk is great and as a night drink. I love it with warm water, cinnamon and honey, a quick treat and great night cap.
Soya milk, Rice Milk, Carob powder and agave are choices that work for your health.

Eat a mixture of vegetables and fruits. Go for a raw salad with a simple dressing. Olive oil, honey, herbs and lemon juice. Have steamed vegetables once a day with herbs and grated cheeses. Use whole-wheat rice and couscous, barley, soya garbanzo beans, lentils good pastas for quick and easy meals. Do not make a habit of using ready soups. Just create the stock you need at home {look at the blog of Preparing for winter] and make soup in twenty minutes. Home made soups are fresh, healthy, free of complicated additives and are comfortably digested. Ideal for older people, little kids and anyone who needs a warm, quick meal.

Breads should be chosen well. Look at the sugar and salt content. If you do not feel good when you eat wheat, choose spelt and rye bread. Remember crackers are useful and easy…but check the preservatives and salt and oil content.

Cereals should be simple. Granolas are better without added salt and oil. You can cook a quick oats and porridge within five minutes. Add cinnamon and honey and it is the best.

Find the best milk and do not use fancy yogurts. Buy good cheeses and not over processed and treated against fats, cholesterol, low fat and a host of disguises. Cheese should be cheese, not a rubbery glue with promises of being free of everything.

Clear the fridge and kitchen of tins and preservatives. Replace with herbs and spices, lemons, olive oil, honey agave syrup, natural pomegranate, grape and cranberry juices. Vegetable juices are a natural boost post operative and for vegetarians and kids. They are loaded with minerals and vitamins.
Speak to your Doctor and check which vitamins you need, do not go for trends and fads, or special offers

EAT AND DRINK FRESH AND TRASH THE REST.

HAPPY NEW YEAR AND THINKING AHEAD TO COLDER DAYS.

I wish you a good year, time to dream and time to enjoy each day. We have all had a week end of eating and drinking, enjoying cakes ,cookies and candies. Now back to the regular routine.
We suddenly have the weather change and feel the need for a good soup, perhaps a warm bowl of food, a casserole and hot meals .

Here are a few ideas to create winter ideas, for colder evenings.
Firstly reorganize your grocery cupboard. Prepare grains and soup ingredients. Do not rely on packaged soups, Do your own.
There are brown and orange lentils, whole-wheat rice, wild rice, barley, all kinds of beans, wheat, oats, soya products, dried green peas, dried mushrooms, garbanzo, chickpeas pastas and noodles.

You do not have to invest in large quantities. Better to buy for two to three weeks at a time. I take the dry goods and place them in air tight containers. I wash them well , when I use them and many need to be soaked overnight or for a few hours.

Create a collection of containers that are suitable for freezing. Not every kind of plastic is good for the freezer. Go into a reliable store and find medium size containers for cooked soups, beans and vegetarian dishes.

I buy small quantities of herbs and spices. Try to use as many fesh products as you can. Use frozen products when you haven’t enough time to create meals with fresh ingredients. I like to have peas and beans in the freezer.

BASIC VEGETABLE SOUPS.

You need a large pot and a variety of vegetables. Go for yellow, greens and sweet potatoes, white potatoes and grains and beans. If you want to use lentils, beans, wheat and barley, wash and soak for a little while. Use fresh parsley, carrots, pumpkin, onions, garlic, dill and good greens like zucchinis, celery and cabbage, broccoli and Brussels sprouts. Simply wash well and cut up, place in the pot of water, add vegetable salt and pepper. You can add a dash of curry, sweet paprika and a few herbs. Cook on a medium flame and let it boil for a few minutes, lower flame and let if cook until the vegetables are soft. Do not store until the soup is cool.
Freeze soups in medium size containers and thaw before warming up. There is an added advantage when reheating soups, just re energize them by cutting up a carrot, onion and a few grated carrots . Jus drop these into the pot. Looks great and tastes good. This is also when you can add a cup of peas or cut up beans from the freezer.

sweet candies and accompaniments for coffee

SWEET ENDINGS …..THE LITTLE CANDIES FOR YOUR COFFEE.

At the end of the evening, when all the food has been consumed and guests have enjoyed conversation and a good time together, we serve the sweet ending. Please believe me, there is always space for the sweets things at the end of a meal. Even the people on a careful eating routine, will have something to taste and enjoy.

I use a large tray or glass plate. Doilies or individual cookie cups look good with the sweets in them
The best way is to set them out in rows,or in circles.

Use the following. Dates, good chocolates, nougat, almonds, halvah and marzipan, dried mango, small fruits like cherries or grapes. The grapes should be firm, red and white. I use nuts and dried raisins too. Baklava is a welcome sweet with a good coffee, and in season watermelon, Bulgarian cheese and arrack, is great.
Good toffees and candies always fit in anywhere………………

Strawberries, and small fruits in season, are a welcome addition to any candy plate


Dates. Wash and slit the dates and fill with pieces of marzipan that has been rolled in coconut.

Apricot and raisin clusters.
113g plain chocolate, 2 large tablespoons honey, 55grams chopped dried. apricots and 55 grams of seedless raisins.
Break chocolate into pieces and put into a bowl with the honey. Stand bowl over a saucepan of hot water. Stir the mixture. Add chopped apricots and raisins. Drop teaspoons of the mixture into small paper cups. Decorate with a small cherry or nut.

Date Balls
A favorite candy. Easy to make and you can freeze these and remove as needed.

Nougat.
I use slices of nougat and dip the ends in melted chocolate.

Halvah.
These can be served in squares in a paper cup.

Apricot and almond candies.
I soak twelve dried apricots in a little liquor overnight. Just enough to cover the apricots. Then I cut them tiny and mix with four tablespoons of crushed almonds and a little ginger. Roll into balls and coat with coconut.

Enjoy you sweet platter of delights with a good coffee or a well chilled glass of Recanatti dessert wine.

There are various kinds and the variety come from all over the world. Tomatoes are better out of the fridge and in direct light. The best tasting tomatoes are those picked when ripe on the vine. Green tomatoes ripen quickly when put into a brown paper bag.
Tomatoes have a high content of water, are low in calories, rich in Vitamins A, B, C, and are ideal for raw and cooked meals.

TOMATO SOUP.

This is a very tasty soup made by Perla.

Glaze two onions and two cloves of garlic, that you have chopped up, in a little olive oil.
When glazed, add two grated carrots and three sticks of chopped celery.Peel and chop two kilos of Tomatoes and mix into the vegetables. Add vegetable salt, pepper and two teaspoons of brown sugar. Taste this and adjust to your liking.
Add one tablespoon vegetable powder, chopped parsley and basil Cook on a medium flame for twenty minutes. Cool. Liquidize and strain,if you want this to be a smooth tomato soup. I serve this hot in a bowl with a few pieces of celery sticks on the side, or cut up chives. on the soup.

For a cold soup, let the tomato soup cool and add two cups of buttermilk. Serve with cut up parsley and a little grated parmesan cheese on top. This is a great starter with chunky brown bread and herb butter.

TOMATO TART WITH BULGARIAN CHEESE.

Use a pastry base, like the ones for a quiche.

Take eight tomatoes and slice up thinly. Cover with olive oil and salt. Roast for twenty minutes in a medium oven. Spread over the dough on a baking pan for the oven. You must oil the pan lightly.
Grate a cup of Bulgarian cheese and sprinkle over. Cut up twelve or more black olives and cover the cheese. Sprinkle rosemary and thyme over the pie. Herbs must have a delicate flavor, so do not overdo the use of herbs. Bake for 20 minutes, until the dough is done. Serve with a fresh green salad and a jug of yogurt dressing with herbs to pour over.
This pie looks good and is delicious.

CHERRY TOMATOES, MINT, BASIL AND PINE NUT SALAD.

Take two cups of cherry tomatoes. Wash and cut into halves. Place in a large flat glass dish . Cut up basil, mint leaves and a few teaspoons of pine nuts and sprinkle over the tomatoes. Make a dressing of olive oil, a few drops of balsamic vinegar, pesto sauce and a grated red pepper. Pour over the salad and serve

BAKED CHERRY TOMATOES AND CLOVES OF GARLIC..

This is an easy vegetable to serve with any main dish. It looks lovely and not a bit remains…everyone loves this combination.
Use a glass oven dish. Wipe with olive oil and arrange the cherry tomatoes in round circles and then a circle of garlic cloves. No need to peel them. Just prick the tomatoes them with a tooth pick, to save them bursting. Another circle of tomatoes and then cloves of garlic. When full, pour over olive oil, salt, pepper and a chopped red onion, salt and black pepper. Bake in a medium oven for fifteen minutes and serve. The cloves of garlic should look roasted. Sprinkle a few grains of sumac over it all.

LOVE WHAT YOU DO FOR PEOPLE THAT MATTER

LOVE WHAT YOU DO, WHERE YOU ARE AND YOUR RELATIONSHIPS TO PEOPLE WHO MATTER TO YOU.

I am always fascinated by the way we act with people who are part of our lives. Perhaps we behave differently with people at home, at work, in the bus, or people we meet in strange surroundings. Often when we are in a hospital, a doctors room or at a clinic, we open up to total strangers. We tell them things our family does not know. We discuss intimate details. Sounds weird? It happens.

At home it is strange how many people put on a show for strangers only. When my kids were little I worked and in order to prepare the Friday night meal, I worked ahead . So the fridge had labels, like for Friday, do not touch the cheese cake, it is for Friday. There were dishes I hid at the back, hoping they would not be discovered……One Friday, I opened the fridge and the labels were changed. The kids decided to eat the chocolate cake and delve into the pudding. It was a good lesson. I decided that the family are the most important guests in the house. No more labels.
My sister, Helena, bakes well. There was always the walking Chocolate Cake , for friends who returned from holiday Her three guys always called them walking cakes….they walked out of the house.

One night I prepared all the food for Friday, did the table and was ready for Sabbath. At about one in the morning, burglars came in and robbed the kitchen. They suddenly realized the table was set for Sabbath, opened the fridge and sat down on the floor and ate all the food. They were interrupted by my son, returning from a date. The police had a great laugh. They could not believe they had enough conscience not to sit at the table…………………….
So do your best for those you love. I feel privileged to have the opportunity to create an ambience and good food for the people I care about. If I am too tired or rushed to make a large dinner, I make it simple, stylish and full of care for their needs. Then I go and sit down, relax or simply read the paper. The idea is to be a happy hostess, not a frazzled and exhausted one.

Try new ideas and recipes; create dishes that are nutritious and interesting. Make surprises for birthdays, their favorite dishes, individual chocolates at each place or a wicked plate of desserts. No one comes to the table with a calorie calculator.

I keep plastic containers for dishes that go home with the family. Desserts must go. I am over the age that I can have them for breakfast. Plan to have extra helpings of food if your family have a heavy week schedule. Soups, cookies, a quiche, a potato salad, home made humous, a jar of beetroot salad or home made muffins love to go home with them.

HERE ARE A FEW EASY IDEAS FOR DINNERS WITH FAMILY..
STARTERS………Make a quiche. Do a spinach or mushroom quiche. Cut with a round or square cookie cutter. Place on a large plate on the left. Create a little salad with a teaspoon or two of mustard on a baked potato . Decorate with sprouts. .
Mushrooms… Use rinsed and dried mushrooms. Lightly fry six garlic and two onions in a little olive oil. Not on high…… Then add the mushrooms, herb salt and pepper and two tablespoons of pesto. Fry through and serve with grated parmesan on a slice of hot toast.

MAIN COURSES.
PASTA AND SAUCES WITH A GREEN SALAD.
Families like a good portion, not the little presentations that blow your mind, but leave you starving. Make a large pot of good pasta. Add a little olive oil and salt to the pot. Drain and serve with the side dishes.
Number one is a bowl of good tomato and basil sauce. Two is chopped or grated cheese with lightly fried onions in it. Three is a dish of steamed broccoli, parsley, grated ginger and mozzarella cheese I add two tablespoons of peas and stir into a bowl. People like to select what they enjoy.
Four A mustard sauce. I make this with grated zucchini, chopped onions, garlic, a little pepper and lemon salt. Fry this all lightly in a little olive oil. I add two large tablespoons of mustard and a jar of yogurt and warm this through.
Place the sauces on a large warming plate with a ladle in each of them.

Make a large green salad, in a flat bowl. Use lettuce, parsley, chives, spring onion, red onion, cucumbers, yellow peppers and lots of mixed nuts on this. The dressing is lemon juice and olive oil with herb salt and pepper.
I keep the salad fresh and full of energy by placing a clean wet towel over it until needed.
