SANE AND SENSIBLE FACTS RE EATING

After the holidays of Passover and Easter, we turn our thoughts to more sensible eating. Of course we gained some weight, but now we need to do something about it all. 
I do not believe in crazy  diets, weird concoctions to alter calories,  a zillion ideas instead of sugar and  impossible ideas about skipping meals, drinking cocktails of no sugar,   no calories,bad chemicals  and heavens knows what else.  


I  like the idea of three meals a day. I believe in the little snack that staves off hunger, but it must be in logical proportions to what you consume all day.

My son in law, Aaron Shuster advocates the Sunrider programme to keep  a good balance of weight and wellness and you can check him out on Facebook.
The idea of drinking less caffeine, a few good supplements, works for busy people. When you exercise and breathe well, you are on the way.

Some  of my friends go to a DETOX programme a few times a year. It reminds you of what you need to do. The drinks you consume are healthy, organic and full of minerals and vitamins. The few days you spend there are infused with good advice and ideas of healthy living for body and soul.  Look at the site of ZVIKE  and PNINA KOREN called JUICE FASTING.

Some years ago I attended a Food Conference and the speakers were from IsraelEurope and people in our nearby countries. Local foods, the  fresh produce we have in our area, methods of preparation , were discussed. All of these  details are   important. Eating is a necessity,and must be  done with a spiritual and a conscious understanding of why we eat and how we prepare the food.


For starters look at your refrigerator and toss anything that is outdated,full  of chemicals, preservatives and is old. If it replaces the natural product, make the right choice. We do not need fancy salad dressings,  heavily mixed sauces and gravy additives to our foods 


GO BASIC AND NATURAL 
OLIVE OIL. LEMON JUICE, HONEY, TECHINA, MOLASSES, HERBS, NATURAL SEA SALTS AND VEGETABLE SALTS,
GOATS CHEESES, SKIP THE PROCESSED IMITATION CHEESES, BUY NATURAL YELLOW CHEESE.  FORGET ABOUT INSTANT SOUPS, GRAVIES, CONCOCTIONS THAT HAVE FANCY PACKINGING.  IF YOU LIKE  FANCY LABELS, BUY GIFT PAPER AND ENJOY AND ENJOY LOOKING AT THOSE. EVEN THE CEREALS WE BUY ARE  PREPARED IN WAYS YOU DO NOT WANT TO KNOW ABOUT. CHOOSE OATS, BRAN, PISTAN LINSEEDS  SEEDS, SESAME, COCONUT, NUTS AND RAISINS AND MAKE GREAT GRANOLAS AND  MUESLIS. ADD WASHED AND CUT UP DRIED FRUITS AND BAKE IN THE OVEN. HONEY IS A SUGAR CHOICE, A BIT OF CINNAMON AND A FEW CRUSHED ALMONDS MAKE A FABULOUS  CEREAL TO ENJOY WITH YOGURT, BUTTERMILK, SOYA OR MILK.

CHOOSE BREADS AND CRACKERS THAT ARE FREE OF ADDED QUANTITIES OF OILS, SALTS AND SUGARS.

HAVE A GOOD WEEK AND MAKE IT ONE OF BETTER CHOICES.

EASY PASSOVER MEALS 2011

================PASSOVER,,,QUICK IDEAS.

Here are a few quick meals.

MATZO  FATTOUSH AND SALAD.

Take two large pieces of matzo, break into small squares and fry in a little olive oil,  half a teaspoon of dried parsley, freshly chopped chives  and vegetable salt and pepper.
Dice the following, ..three tomatoes, three cucumbers ,one celery stalk, chopped green onion,  a diced kohlrabi,  three finely diced radish, ten chopped mint leaves and a yellow pepper.
Place in a bowl on a bed of torn lettuce. Add the matzo pieces and a dressing of olive oil, lemon juice and a few pine kernels.  This looks good and is quick to do.

MANGOLD SALAD.

Wash six large Mangold leaves and boil in lightly salted water until they wilt. Then drain , cool and cut into slices.
  

Take one packet of Matzo Kneidel mix and stir in two beaten eggs, I cup of boiling water a chopped onion, vegetable salt and pepper and some dried onions. .Grate one carrot into this mixture. Add  the chopped leaves and make patties  out of the mixture.  Leave in the fridge for half an hour. Fry in oil and serve with salad, or place it in a loaf shape into a bread shaped baking oven dish . Bake at 180 for twenty minutes.

POTATOES AND MUSHROOM BAKE

Wash seven potatoes and bake them in the oven. When ready cool for a few moments and slice them carefully, with the skins on. Place them in an oiled  flat baking dish Then lightly fry two cups of  slice mushrooms, one onion and a few garlic cloves in olive oil.  Place these on the potatoes. Make a simple sauce of two yogurts, vegetable salt, pepper and some  grated cheese. Like Gilboa or  Emek. Stir it all and pour oven the potatoes and mushrooms Bake this for twenty minutes in a medium oven
Serve with a green salad.
