SHAVUOT DAIRY DELIGHTS
SHAVUOT ….FESTIVAL OF FRUITS AND CHEESES, SUMMER BOUNTY
Cheeses come in a large variety of local and imported kinds. I like to use local cheeses. The variety is enormous and the amazing goats cheese are simply are the best.
Create a few simple dishes with cheese. Cheese cake, scones a pasta dish and a quiche
Just add a bowl of fruit, ice cream a bottle of wine ,a few wholesome breads and you have a wonderful meal.
CHEESE CAKE RECIPE BY MY FRIEND HANAH.
The Pastry base.
1 cup flour. 1 level teaspoon baking powder.
2 0zs butter/ ¼ cup sugar
I beaten egg.
Rub the butter and flour together, add the butter and sugar and egg.
Roll and place in a baking tin and refrigerate for an hour or two.
The Filling.
500grams 5% Cream cheese
½ cup sugar
2 eggs
¼ pint cream
I dessertspoon vanilla custard powder, mixed with the cream.
Mix all well and pour into the base. Bake in a 325 oven for 40 minutes.
Serve with a diced fruit salad, or cut up strawberries or a coulis of granadilla pips. Enjoy
MOM’S SCONES
. 2 cups flour 4 teaspoons baking powder
2 teaspoons of sugar .1/2 teaspoon of salt.
4 tablespoons butter. 2 eggs
1/3 cup of cream or milk. You can use soya milk.
Mix the dry ingredients. Work in the butter. Add the beaten eggs. Toss the dough onto a floured board and roll quarter of an inch in thickness. Cut into squares or rounds. You can grate in a few teaspoons of cheddar or parmesan cheese. Bake at 180 degrees or 450, for fifteen minutes. Serve with butter and ja, whipped cream and blackberries or strawberries.

QUICK DOUGH FOR PIZZA, QUICHE OR BASE FOR SAVOURY PIES.
1 cup of Self Raising flour
2 tablespoons of butter. A pinch of salt
1 beaten egg with a little cold water.
Rub the butter with the flour and salt.
You can add ½ a teaspoon baking powder.
Mix in the water and egg . Roll into a dough on a floured board. Chill the dough for an hour in the fridge.
Use a lightly oiled baking dish or pizza tray
And press the dough in. Fill with your choice and bake in an oven of 180 until the dough looks firm and light brown.
SHAVUOT IDEAS THAT ARE QUICK AND EASY.
Serve a cut up fruit salad with ice cream balls and fresh bread and butter.
Yogurt in a bowl, with cut uo fruit of the season, a tablespoon of granola and silan, date mixture or honey. People love this.
For kids. Make a platter of diced cheeses with toothpicks, cut up cucumbers and cherry tomatoes. Cut thin strips of peeled carrots and leave in iced water for an hour. Serve cut up watermelon and grapes. They love to choose and create their own plate. Have a lovely fruit drink with dizzy looking straws and colorful serviettes
Serve a slice of quiche with grated carrots, diced cucumbers, sliced radishes and kohlrabi. Use cherry tomatoes that have been in a marinade of olive oil, chopped basil and mint leaves. You wash and prick the tomatoes and simply leave them in a marinade for a few hours. Adds color and style to the plate.

YOGURT THE WONDER FOOD.
YOGHURT
One of the greatest foods is Yoghurt. I have enjoyed this for over forty years and never tire of the fact that it is satisfying, can be created in a variety of tastes and works as a healing and nutritious food.
When I opened my Health Store in the late sixties, I found that this was a novelty When you visited many spots in Europe , especially health and wellness farms, they introduced you to natural Yoghurt. One you developed a taste for it, it became a favorite in your diet.
Here are a few original ways to enjoy Yoghurt
For a healthy breakfast, have yoghurt with cut up fresh fruits of the season, and a few spoons of granola. Add honey or date syrup, a sprinkle of cinnamon and enjoy.
Sunrider NU PLUS is a food you can add to Yoghurt. It is a Soya based choice and comes in a few flavors .Ideal for the traveler as it comes in a packet as a powder and creates a quick and balanced meal.

TZATZIKI.
The ideal cold soup or as a meal with a salad. You can pour it over sliced, baked potatoes, or eat it with steamed vegetables.
250 ml natural yoghurt. One large diced cucumber, two finely chopped garlic cloves, a teaspoon of lemon juice, a teaspoon of olive oil ,vegetable salt and pepper to taste.
Mix all the ingredients in a blender, chill and serve in a soup bowl or in a jug to use in different ways.
I find that this is lovely as a soup with toasted bread or pitot

APRICOT YOGHURT TART
.
200 GRAMS crushed Petit beurre or ginger biscuits,
100 grams melted butter,2 tablespoons castor sugar one packet orange jelly
,125ml hot water, 500 ml apricot yoghurt.
Make the base, use crumbs of biscuits, melted butter and castor sugar. Mix and press into a base , the loose based kind. Place in fridge for ten minutes. Dissolve jelly in hot water. Cool, until it nearly sets, Whisk in the yoghurt Pour into the chilled biscuit base and chill. Decorate with whipped cream or some crushed almonds. Enjoy

YOGHURT CAKE
Easy and quick…………..
1 container yoghurt 1 ½ cups sugar 1 cup oil. 3 cups self raising flour
3 beaten eggs. I add cinnamon and a cut up banana ,a grated apple or fruit in season.
Mix all together . Bake 40 minutes in hot oven

SWEETCORN AND YOGHURT PIE.
Use two cups of sweet corn kernels, I container of cottage cheese, one jar of yoghurt and a cup of grated cheese. Mix all with two eggs and add vegetable salt, black pepper and a little grated onion, and two tablespoons of thinly sliced parsley. Place in a lightly oiled dish and bake in a medium oven for thirty minutes. Serve with a fresh green salad and dressing of olive oil, lemon and herbs. Enjoy.

SALAD DRESSING.
I I use a jar of yoghurt, add vegetable salt, pepper, a little dried parsley and basil, a few chopped mint leaves and whisk it well. You can pour this onto a green salad.

If you enjoy baked sweet potato, potatoes, beets and zucchinis, you can pour a yogurt dressing over it all and serve it that way. Just add a few grated walnuts on top
I use fruit yoghurt and mix it with chopped cranberries, a few crushed walnuts and serve this over a baked apple.
Use a jar of yoghurt, add chopped red pepper, chopped parsley, chopped cucumbers and half a cup of thinly sliced lettuce. Place on a plate and add grated carrots, a few chopped nuts and raisins. Great summer meal.

YOGHURT AS A FACE PACK, FIRST AID AND ADDITIVE TO HEALTH
When you have anti biotics, eat a yoghurt a day, plus the vitamins the Doctor advises

Use yoghurt as a face mask. Wash the face well and for oily skins, use half a cup of yoghurt, plus a tablespoon of oats and a grated cucumber. Spread and leave on the face for fifteen minutes. Splash.
off and dry.
For a dry skin, mix the yoghurt with a few drops of olive oil and leave on the skin for ten minutes. Splash off.
I use yoghurt if I have sun burnt Just wipe onto the skin. For personal use there is nothing like yoghurt. Drink Cranberry juice to clear irritation and use yoghurt as a cream.

SANE AND SENSIBLE FACTS RE EATING
After the holidays of Passover and Easter, we turn our thoughts to more sensible eating. Of course we gained some weight, but now we need to do something about it all.
I do not believe in crazy diets, weird concoctions to alter calories, a zillion ideas instead of sugar and impossible ideas about skipping meals, drinking cocktails of no sugar, no calories,bad chemicals and heavens knows what else.
I like the idea of three meals a day. I believe in the little snack that staves off hunger, but it must be in logical proportions to what you consume all day.
My son in law, Aaron Shuster advocates the Sunrider programme to keep a good balance of weight and wellness and you can check him out on Facebook.
The idea of drinking less caffeine, a few good supplements, works for busy people. When you exercise and breathe well, you are on the way.
Some of my friends go to a DETOX programme a few times a year. It reminds you of what you need to do. The drinks you consume are healthy, organic and full of minerals and vitamins. CHOOSE OATS, BRAN, PISTAN LINSEEDS SEEDS, SESAME, COCONUT, NUTS AND RAISINS AND MAKE GREAT GRANOLAS AND MUESLIS. ADD WASHED AND CUT UP DRIED FRUITS AND BAKE IN THE OVEN. HONEY IS A SUGAR CHOICE, A BIT OF CINNAMON AND A FEW CRUSHED ALMONDS MAKE A FABULOUS CEREAL TO ENJOY WITH YOGURT, BUTTERMILK, SOYA OR MILK.
